“Healthy” Cookie Dough Pie

Healthy cookie dough pie, is there even such a thing?

Chocolate Covered Katie seems to think so and I couldn’t have agreed more. Katie makes wonderful recipes that are full of flavor, creativity and healthy ingredients. Check out her amazing blog for the original recipe!

I decided to take on the  challenge of making my own version of the cookie dough pie and the results were astounding.

This may be one of my new favorites! 🙂 Okay enough teasing here’s the recipe:

“Healthy Cookie Dough Pie” (gf. & df.)

1 can of  garbanzo beans

1/2 cup of  quick oats (gluten free)

1/4 cup unsweetened applesauce

1/2 tsp baking soda

2 tsp baking powder

1/2 tsp salt

2 Tb brown sugar

2 Tb stevia

1 Tb chia seeds

4 drops vanilla stevia

1/2 cup of chocolate chips ( I used Enjoy df & gf ch.chips)


Turn oven to 350 degrees

Blend all the ingredients in a food processor except for the chocolate chips.

Once blended stir in chips, and then add to a  well sprayed pie shell pan. ( I used a 9 inch pan)

Cook for 35 minutes and then let sit for ten minutes before serving.

Kenny and I tried it warm and cold the next day. Both ways were amazing but I especially liked it cold because of the resemblance of  raw cookie dough.



The whole pie is around 1270 calories but divided into 6 servings:
