Chicken. Spinach. Dairy free Cheese.

This recipe is fun, easy, and very tasty. All the important factors when cooking right?
Stuffed Chicken Breast with Spinach and Cheddar (dairy free) Cheese
4 oz chicken breast
1/4 cup cooked spinach
2 Tb. Dairy free cheese ( or reg low-fat cheese)
1 Tb. garlic
1/2 tsp. pepper
First things first, take your 4 oz of chicken and place it in a zip lock bag. You want to flatten chicken as much as possible by whatever means you have. Mine consisted of a potato masher (I wish I was joking). Pound that chicken breast and create a thin flat piece.
Next cook 1 cup of raw spinach on stove top with 1/2 Tb. of garlic. Once sautéed take 1/4 cup of spinach and place in the center of chicken. Next place two Tb. of “cheese” on top of spinach and then fold chicken in half. Take two tooth picks and slid them on the folded end of the chicken to keep in place.
Place folded chicken in frying pan with a little water and cover with lid on low heat for about 5-10 minutes (depending on heat setting).
Throw some roasted parsnips on the side with a tsp of agave!
