Mini Peanut Butter Cookie Dough Bites

It’s peanut butter time!

 I am in  love obsessed with peanut butter and recently decided to stock up on PB2.

It’s one ingredient I use in a LOT of recipes, because of its great nutrition and flavor.

Pb2 is low in calories, fat, sugar,  and carbohydrates but high in protein and fiber.

This is what I came home to yesterday:


I decided to bust open the box already and start experimenting in the kitchen.

I came up with this little snack.

Mini Peanut Butter Cookie Dough Bites


1/4 c. plus + 1 Tb.  PB2 112.5  cal

3Tb Gluten Free Bisquick( oat flour or other flour sub.) 60 cal

3 Tb Oat Milk  (or milk sub.) 24 cal

1 Tb. Brown Sugar 45 cal

1Tb. Stevia 0 cal

1 Tb Chia Seeds 60 cal

1/4 tsp.  salt 0 cal

1/4 tsp.  baking soda 0 cal

1/4 tsp. vanilla  0 cal

Total: 300 cal

Approximately 20 balls

15  calories a piece!!!

Add everything together in kitchen aid mixer, or in a  separate bowl and mix with a hand mixer.

Then take dough and roll out into 20 mini balls.

They are about 1/2 tsp. in size, but very much full of flavor!

You are going to love these.

Throw them on top of  vanilla frozen yogurt.

Spread a couple on a deep chocolate vita top.


Just pop them in your mouth and enjoy!
