It’s Fajita Time! Andale! Andale!
One thing Kenny and I both love is Mexican food! I bet you thought I’d say wine right?
We’ll I love that too. (Obviously) 😉
One of the bad things about Mexican food is all of the oil they cook the food in. So for this recipe we will only use a little chicken broth, water, canola oil spray, and save a TON of calories!
You can use whatever fajita vegetables you like but tonight we went with:
1 Orange Pepper
1 Red Pepper
1 White Onion
For the Meat we used:
Sauces we used:
Naturally Preferred’s Organic Salsa in Medium
Cholula Hot Sauce in Original
Flat Out’s Flat Bread with Flax
Cut chicken into strips and cook with 1/2 cup of water, 2 Tb of Cholula sauce, garlic, and pepper.
Next heat up second frying pan and add chopped vegetables with 1/2 – 3/4 cup of water.
Add additional garlic, and spray veggies a couple of times with canola spray. Cover and let simmer till tender.
Once chicken is done weigh out serving size.
Weighing your meat is important and 3 oz of cooked chicken is an appropriate serving.
Finally, add vegetables meat and sauces to wrap
